Sulawesi (formerly known as Celebes), is an island located in the middle of the Malay Archipelago.. With a shape that spreads like a four-fingered hand, this island is one of the important coffee producing region in Indonesia.
Coffee Production in Sulawesi
Most specialty coffee from Sulawesi originates from the mountainous region near the base of the south finger of the island and are usually labelled as either Toraja or Kalossi.
Similar to Sumatran, processing of Sulawesi coffee is mostly done by the Giling Basah or wet-hulled method.
Characteristics
The wet-hulled processing has a significant effect on the character of Sulawesi coffee.
Their flavors have that signature earthy, fruity yet clean taste that Indonesia is known for, mingled with hints of spice and a warm nuttiness.
