Tom Lee started his coffee career in 2016 as a barista. While training as a barista, he learned about the coffee roasting and became fascinated with it. He immediately knew he wanted to be involved in the roasting process.
Soon after, he started working guest shifts at Mimosa Coffee. He impressed the staff there and was made a permanent team member in 2017.
Tom devoted himself to hone his coffee roasting skills and was recognized for his effort when he was made the Chief Roaster for Mimosa Coffee.
“When I got the opportunity to be the Chief Roaster, I can’t really even describe it, because it was that something I said I wanted to do. And I did it,” Tom said. “I believe I still have a lot to learn and I will strive hard to make each batch of my coffee better”
Mimosa is armed with a 500g Mill City Roaster.
The Mill City 500g Roaster is a small but reliable gas-powered coffee roaster. Its small capacity is ideal for sample roasting a new batch of green coffee.
Mimosa uses this mini wonder to micro-roast small quantity of coffee on demand.
Tom believes each coffee has a potential to be good, if not excellent.
Regardless of the grades or region, he strives to bring out the best of each batch of coffee he roasts.
